Apple and Cranberry Strudel
Enough for 3-4 people
400g Bramley apples, peeled and cut into thin slices
100g fresh or frozen cranberries
40g dried cranberries
30g breadcrumbs
40g Demerara sugar
40g melted butter
Juice of ½ lemon
6 pieces of filo pastry
1 tbs. halved almonds
½ tsp. cinnamon
Oven : 190C/Gas 5
Place the apples, cranberries and cinnamon in a bowl with the sugar and lemon juice.
Open the pastry and cover with a damp cloth to prevent from drying. Place three pieces of the filo pastry together, lengthways and brush with the butter, before adding the next three layers.
Sprinkle with breadcrumbs and place the fruit down the centre within 3cm of the sides. Fold the the two shortest sides over the fruit before rolling like a Swiss Roll. Brush with the butter before sprinkling the almonds over the top. Cook for 25-30 minutes until golden.
