Bacon and Cheese Muffins

Bacon and Cheese Muffins

6 large muffins or 12 small muffins

250g flour
1 tsp. baking powder
Salt and pepper
75g back bacon
75g mature cheddar cheese
5ml dried herbs
75g butter cut into pieces
1 large egg, beaten
approx. 75 ml milk or a mixture of plain yoghurt and milk
a little grated cheese

Sieve the flour and baking powder into a large bowl. Fry the bacon until brown and then grate the cheese. Add the bacon and cheese to the flour and then add the herbs. Make a well in the middle and then add the remainder of the ingredients and mix lightly.

Line a muffin tin with muffin baking cases and add the mixture.

Sprinkle with a little grated cheese and some black pepper. Cook in the oven at 400C/200F/Gas 6 for 20 minutes until golden.

Serve warm.
