Anna comes from Kidwelly and she was very succesful in the Chez Dudley competition on S4C in 2006. She keeps the Farriers Inn in Trimsaran near Llanelli, and she appears regularly on Wedi 3.
"I was brought up in Cydweli as the eldest of three sisters and from an early age took an avid interest in all things culinary. Mammy was a fabulous cook and I can vividly remember her collecting the Corden Bleu Cookery Series which was published monthly and eagerly awaited. Each month we would experiment with some success and our repertoire was expanded as the months went by. Dad was / is a Vet / farmer and consequently there was always an abundance of produce to experiment with. I thought nothing of tackling rabbits/pheasants etc to pluck, skin and joint ready for the pot!
Chez Dudley catapulted me back into the catering world and opened doors such as Wedi 3 etc (I also write a weekly column for the Llanelli Star / Carmarthen Journal). I relish the challenge of cooking regularly on Wedi 3, producing a dish in 6 minutes flat is just so exhilarating! The feedback has also been so positive.
My favourite food is anything Welsh; lamb, beef, seafood, homegrown vegetables, but most importantly cooked simply. Chefs tend to feel the need to impress by complicating dishes with unnecessary flavour.
My hated food is anything overcooked and too spicy. I enjoy some heat, but nothing that takes over the flavours of the dish.
I’d describe my cooking style as homely, rustic and gutsy. Sauces are a passion of mine and I also enjoy the fact that ingredients cooked well can appeal to all tastes. I have converted several of my customers to cabbage! (I stir fry it in olive oil with salt and pepper)
The best tip I have is to wear long sleeves in the kitchen, to prevent burns to lower arms when cooking!"
